Aromatic Chinese eggplant

Ingredients
450 g eggplant
2 tbsp salt
3 tbsp sunflower oil
2 cloves garlic, mashed
2.5 см root ginger, grated
1 onion, cut into half-circles
1 chili pepper, cut
2 tbsp dark soy sauce
sauce 1 tbsp hoysin (Chinese barbecue sauce)
1/2 tbsp chili sauce
1 tbsp brown sugar
1 tbsp vinegar
1 tbsp pepper
300 ml vegetable broth
Method
Cut the eggplants cubes Salt, allow 30 minutes to drain, rinse and dry. Put the pan in sunflower oil and heat, fry the garlic, ginger, onion and chili. Fry for 30 seconds, then add the eggplant, fry another 1-2 minutes. Add soy sauce, sauce hoysin, chili, sugar, vinegar, pepper and vegetable broth. Reduce heat and simmer, without cover, about 10 minutes until ready. Serve hot.
