Baldo (Bali)

Ingredients
1 kg zander
1 clove garlic (blend)
1 tsp salt
2 cup sunflower oil
# For the sauce:
3 tbsp sunflower oil
3 tbsp soy sauce (sweet)
1 cup boiling water
1 tsp sugar
1 tsp salt
# For blending:
1 large piece of ginger (crushed into large pieces)
2 pinches of ground ginger
2 tomatoes (cut into quarters)
5 cloves garlic
10 chilli cleaned of seeds
Method
The cleaned fish cut into 3-4 pieces, salted and rub the blend of garlic and let stand 15 minutes. Heat the oil and fry until browned. Fried pieces drain and arrange in a container with paper towels. Listed products Strain the sauce and fry in the oil for about 5 minutes until the sauce thickens. Then add boiling water, soy sauce, sugar, salt and leave to simmer. Once the sauce thickens add the fish and leave for 5-10 minutes to boil it. Serve a piece of fish, sprinkled with plenty of sauce.
