Breaded eggplant sandwiches

Ingredients
2 eggplants
100 g cheese
6 tbsp flour
1 egg
salt
pepper
sunflower oil
parsley
beer
red pepper optional
Method
Eggplant Peel and blanch in boiling salted water for 3 minutes. Drain, cut into circles with thickness of about 1 cm. And dried with a cloth. Connect the two circles and in the middle put a thin piece of cheese. Optional can sprinkle with paprika. Received eggplant sandwiches are immersed in the prepared batter mixture of egg, flour, 1 tsp sunflower oil, salt, pepper and beer, which is added by little, until the mixture begins to stick to the spoon. Submerged eggplants are fried, put them on a pyramid and sprinkle with chopped parsley. Serve can be field with tomato juice. Instead of cheese can be used and processed cheese.
