Ingredients
2 eggplants
2 zucchini
6 potatoes
1 onion
garlic 1
2 tomatoes
sunflower oil
bay leaf
Method
Eggplants, courgettes and potatoes are cut into rings and fry. In the remaining oil fry the chopped onion and garlic. In a baking dish arrange fried rings as between layers sprinkled with fried mixture of onion and garlic. All sprinkled with grated tomatoes. Add water and bake in a preheated oven.
