Crispy eggplant

Ingredients
2 large eggplants
150 g cheese
3 eggs
100 g breadcrumbs
salt, pepper
frying fat
parsley

Method
Eggplant cut into rings, add salt and their exuding bitter water . Then dry, dip in beaten eggs and rolled in breadcrumbs. Fry until golden. Ready eggplant rank fan in a baking dish, sprinkle with plenty of cheese and seasoned with pepper. Baked to golden in the oven at 200 C. Decorate with parsley and served with a sauce of your choice.
