Dark sauce in Spanish for roasted meats, turkey, game
150 g of beef trimmings
100 g smoked brisket or smoked sausage
1 tbsp (10 g) flour
2 cup (400 ml), strong broth
1 tbsp (10 ml), strong red wine or strong liquor
Sliced meat ingredients are smothered in fat. Add and sauté 15 minutes grated aromatic roots. Sprinkle with flour, paprika, pour broth, stirring continuously and cook on low heat about 30 minutes. Add red pepper, lemon juice and salt to taste. Continue cooking on low heat for 30 minutes (if the sauce is too thick, add a little broth). Strain the sauce through a sieve thick, degreased and taste wine or liqueur. Variations: 1. To the sauce add 4-5 finely chopped pickled mushrooms. Serve to roulades. 2. The sauce is prepared with the addition of white wine and berries - blueberries, blackberries, raspberries and pine tip tied in gauze. Suitable for game.
