Dip Parsley

Ingredients
4 slices of white bread without crust
1 bunch chopped parsley
3 tbsp finely chopped onion
1 yolk
4 tbsp olive oil
2 tbsp vinegar
salt, pepper

Method
Soak the slices bread in water for 6-7 minutes, then squeeze them well out of the water. Blend the bread, parsley, onion and egg yolk in a blender or food processor to a smooth puree. Gradually add olive oil and vinegar. Serve immediately or refrigerate. Serve with fresh vegetables (baby carrots, cherry tomatoes, cut into julienne peppers), chips, toast.
