Eggplant salad and cottage cheese

Ingredients
2 eggplants
200 g cottage cheese
2. tbsp mayonnaise
lettuce 2
3 cloves garlic
2 tomatoes
sunflower oil
pepper
salt
Method
Peel the eggplants and cut into cubes. Boil in salted water and leave to drain. Hammer is the garlic with a little salt and mix with eggplant. Stirring continuously, add pepper and sunflower oil. Beat (preferably with a mixer) the cottage cheese and mayonnaise. Little by little, mix the two mixtures. Allow the better refrigerated to cool. Before serving, add the shredded lettuce and diced tomatoes. Optional garnish with chopped parsley. Instead of eggplants can put zucchini. At the cottage cheese can add grated onion.
