English tea cake

Ingredients
125 g butter
3/4 cup (150 g) sugar
3/4 cup (150 g) potato flour
3 tbsp (30 g) wheat flour
3 eggs
60 g almonds
75 g candied cherries
30 g raisins
50 g candied fruits
2 tbsp (20 ml) rum
pinch of lemon peel
1 tsp (5 g) vanilla
1/2 packet of baking powder
pinch of salt
Method
The butter mix of foam with the sugar, lemon zest and vanilla, add potato and wheat flour, salt, baking powder and eggs. Almonds are cleaned, ground and washed, dried raisins and chopped candied fruit put in the dough. Cherries are cut into pieces, sprinkle with flour and with rum mixed into the dough. Pour the mixture into a greased with butter cake form and bake about 40 minutes in a moderate oven.
