Garam masala

Ingredients
1 small cinnamon stick
1 tsp black peppercorns
6 cloves
1 tbsp cardamom
2 tsp coriander
2 tsp cumin seeds
1 small bay leaf
1/3 tsp nutmeg

Method
Cardamom, coriander and cumin are roasted slightly dry pan, constantly stirring. Wait to cool and together with other spices are ground in a blender with a coffee machine or bruised well in a mortar. Stored in a glass jar, tightly closed. Garam Masala, (literally. "Hot spices" - so named because body heat) is a mixture of spices and add to the dish at the end of cooking, sometimes just before serving. There are many varieties garam masala,.
