Monastery stew - vegan

Ingredients
1 onion
2-3 carrots
200 g onions
200 g mushrooms
1/2 cup Rice
3-4 potatoes
2 tomatoes
salt
pepper
sunflower oil
parsley
Method
In sunflower oil sauté chopped onions and carrots. As is tender add onions, mushrooms, salt, pepper and 1 cup water. After 10 min, rice and potatoes cut into cubes, then another 10 minutes put the chopped tomatoes. Pour into the pan, sprinkle with parsley and bake.
