Mutton stew with potatoes (Lancashire hot pot)

Ingredients
1 kg scrag
3 mutton kidneys
1 kg potatoes
3 onions
200 g mushrooms
500 ml meat broth
60 g butter
salt
pepper
Method
The meat is cut into pieces, remove excess fat. Peeled potatoes cut in large pieces and onions finely. Mushrooms are cleaned without peel, wash and cut into halves. Kidneys halve and after removal of the ducts are washed. All products are arranged in layers in deep earthen vessel. The potatoes are put on top. Each layer sprinkled with salt and pepper. Finally, everything is flooded with melted butter and meat broth. Close the container tightly and the dish stew 3 hours over low heat, occasionally stirring.
