Papoutsaki - shoes

Ingredients
5 small eggplants
500 g minced meat
400 g tomatoes
1 onion
1 tbsp tomato paste
salt
little cinnamon (1 stick)
sunflower oil
breadcrumbs
pepper
# For the sauce bechamel:
600 ml milk
7 tbsp flour
3 tbsp margarine
2 eggs
salt
pepper
grated nutmeg
Method
Eggplants cut in half and carve a spoon. Fry on both sides and leave to drain the oil. Fry the minced meat with the onion, add minced meat tomatoes and tomato paste. Allow to boil and add the spices. When the mince is ready add breadcrumbs to thicken. This mixture is filled eggplants Arrange in a baking dish, pour bechamel sauce and baked in a hot oven. The sauce is prepared as in margarine fry flour until golden. Slowly and gradually, with constant stirring add fresh milk sauce and leave the fire to thicken, stirring to avoid lumps remain. When ready remove from heat and slowly add the beaten eggs and spices.

I add to the mince, tomatoes and middle part of the evil padladzhana which are removed in the sinking cut into small cubes. Also, before you flood the eggplant filled with bechamel to crumbled cheese on eggplant or 10 min. Before baking dish to nastarzhem little cheese on top and dopechem until golden.
