Pickled red onions

Ingredients
2 red onion
3 cups wine vinegar
3 tbsp sugar
1 tsp salt
a few grains of pepper
a few grains of allspice
2 bay leaves
1 clove garlic (optional)
2 small dried chillies (optional)
Method
Heat the vinegar in metal (not aluminum ) container, add sugar, stir until dissolved. Add the spices and leave to marinade simmer on low heat for about a minute as spices to put flavor. Add garlic cloves and leave it for about two minutes on low heat. During this time, the onion is peeled, cut into thick discs and is divided into individual slices. Then put it in vinegar mixture (you can do this in two batches to cover well with the marinade). Allow to boil for 2-3 minutes, until bright pink is tender and mild. No need to boil longer - nice to stay crunchy. Remove from heat and allow to cool completely. Transfer the onions and marinade is in a jar and closes nice. Can be stored in the refrigerator for a long time. Ideal for sandwiches and for decoration.

It is quick and easy. Can be done with small heads without onion is cut. Glad you like it :)
