Potato Nest (Pateta Par Eeda)

Ingredients
3-4 eggs
3 potatoes, grated
1 small onion
by 1/2 tsp ground ginger and minced meat garlic
3 tbsp chopped coriander
a pinch of turmeric and chili dust
1 tbsp vegetable oil
salt, pepper

Method
In a non-stick pan fry the onion, ginger and garlic until browned. Season with salt and pepper, turmeric, chili powder. Excess water from the grated potatoes drain and add to the pan (spread evenly). Sprinkle with coriander and cook (fry) bottom until golden. Potato nest turns with a lid or a large plate (if necessary, add oil to the bottom of the pan) and bump up the eggs on top, bake until golden again be taking cover with a lid to the readiness of the eggs. The bottom should be well baked and crispy. Cook on medium heat. * The eggs can be broken down before adding them. * You can garnish with coriander, instead of adding to the base coriander. This leads to a lot of greenbacks. * You can sprinkle with feta cheese for extra flavor. * You can sprinkle with paprika. * Can be cut into wedges or squares and serve as an appetizer.
