Ingredients
2 kg potatoes
90 g butter
3-4 eggs
1 tbsp flour
pepper, salt
Method
Boil the potatoes and grate them after cool. Beat the egg yolks with the butter, flour, pepper and salt and gradually add the mixture to the potatoes. Finally, carefully add the beaten whites and gently stir. Place the soufflé in a greased and floured pan and bake in a moderate oven until it turns rosy.
