Remoulade sauce - red

Ingredients
4 tbsp sunflower oil
4 yolks of hard-boiled eggs
1/2 tbsp mustard
1 tsp paprika
1/3 tsp ground black pepper
1 tsp lemon juice
a pinch of sugar and cinnamon
1 cup vegetable broth
1/2 tsp brandy
salt
Method
With a fork smash yolks of hard-boiled eggs and add the oil drop by drop, stirring with a fork. Then put mustard, sweet red pepper, ground black pepper, lemon juice, sugar, cinnamon and salt. Mix well, triturated through a sieve and pour into a container that is placed in another container filled with cold water. The mixture was stirred well. Finally diluted with vegetable broth and pour brandy. This sauce is suitable for roasted and stewed meats.
