Richmond cakes

Ingredients
250 g puff pastry
3 tbsp raspberry jam
60 g almonds
1/4 cup (50 g) sugar
1 tbsp (10 g) cream
1 tsp (5 ml) cognac
2 eggs
2 tbsp (20 g) flour
a pinch of baking powder, cinnamon and salt
Method
Forms for small cakes (Tartalettes) covered with puff pastry. They put little marmalade. Yolks separated from egg whites break with a little salt on hard snow and mix gently with the ground almonds and other well-mixed products. Cakes are supplemented with the mixture and bake about 20 minutes of moderate preheated oven.
