Beets bake in the oven or boiled until soft in water, acidified with a little vinegar. Orange is peeled and cleaned from the skins. Chop freckles. Arranged in a plate of salad. Olive oil, mustard, vinegar and spices mixed with them pour the salad. On top sprinkle with chopped walnuts and parsley.
