Salad onions

Ingredients
450 g cleaned small onions (shallots)
50 ml wine vinegar
3 tbsp olive oil
3 tbsp sugar
3 tbsp tomato paste
1 bay leaf
salt and pepper
parsley for sprinkling

Method
In the pan is poured 300 ml water. Put onions, olive oil, sugar, wine vinegar, bay leaf, tomato paste and sugar. Leave to simmer uncovered over medium heat, without stirring, until almost all the liquid evaporates. Remove from heat. Remove bay leaf. Season with salt and pepper. Serve chilled, sprinkled with parsley - alone or as a side dish of roasted meats.
