Spanish onion salad

Ingredients
4 large onions
1/2 bunch parsley
100 g olives
3 tbsp (30 ml) red wine vinegar
5 tbsp (50 ml) olive oil
coarsely ground black pepper
salt
Method
Onions clean and boil 25 minutes until soft in a large amount of heavily salted water. Parsley washed, dried and cut into in large pieces and olives are cleaned from the stones. Cooked onions drain, dry and cut into circles. Ranks in the serving plate, sprinkle with parsley and garnish with olives. Salad sprinkled with pepper and pour a mixture of vinegar and olive oil.
