Ingredients
1 head of garlic
2 onions
1 stalk leek (white part)
500 g drained yogurt
2 eggs
4 tbsp (40 ml) vegetable oil
1 apple
parsley
dill
salt
Method
Grind the garlic in a wooden mortar with a little salt. Peeled and chopped onion (onion and leek) stew until soft with 2 tbsp vegetable oil and 2 tbsp fish broth or hot salted water, then triturated through a sieve and mixed with garlic and grated apple. Drained yogurt is mixed with other vegetable oil and yolks of eggs. To this was added the slurry from the onion and apple and chopped parsley and dill. The sauce is particularly suitable for small fried fish.
