Spicy tomato sauce Bouquet

Ingredients
1 onion
1 carrot
1 slice chervil
500 g ripe tomatoes or 2 tbsp (20 g) tomato paste
30 g butter
1 tsp (5 g) sugar
1 tbsp (10 g) flour
pepper
piece of bay leaf
2 cup (200 ml) broth of your choice
1 pickle
a few drops of cognac
salt
Method
Onions, aromatic roots and tomatoes, chopped, sauté until soft in their own sauce, rubbing sore through the sieve and pour broth . Add a light roux of flour and half butter. Boil the sauce, add salt and seasoned with sugar, pepper and bay leaf. After boil ten minutes add the chopped into small cubes pickle (well drained of its juice) and a few drops of cognac. The sauce away from heat and stir in the remaining butter.
