Spinach cake

Ingredients
800 g spinach
70 g butter
80 g flour
500 ml milk
100 g dry grated cheese or feta cheese
3 eggs
1 yolk
idiysko pinch nutmeg
breadcrumbs
Salt
white pepper
Method
Properly cleaned and washed spinach boiled in boiling water for 2-3 minutes until soft. Then, drained and cut into pieces. The bottom of the pan put butter, as walnut and spinach stew until the water evaporates. Fry flour 50 g butter and when turn pink, add the milk. The mixture was stirred continuously until it became homogeneous. Season with salt, pepper and nutmeg. Add spinach, beaten eggs, yolks and the feta cheese or cheese (previously broken foam). Heat the oven to 180 C and the mixture is placed in a pre-greased and sprinkled with breadcrumbs round cake. The cake is baked in a water bath for approximately 45 minutes. Check by Pokey with toggle and when it is dry when removing ready. Remove from the oven and allow to rest 10 minutes, then turn around. Serve decorated with a sprig of spinach. Can be used as a side dish to roast lamb.
