Spinach croquettes

Ingredients
1 kg spinach
3 eggs
100 g butter
3 slices of bread without crust
1 onion
200 g feta cheese
breadcrumbs
pepper
salt

Method
Boil the spinach, wring it well and chopped. We put in a deep bowl, add soaking and squeezed bread, one whole egg and two egg yolks, the butter, crumbled feta cheese, grated onion, pepper, salt and mix well. From the resulting mixture prepare oblong and round croquettes. Beat the whites of two eggs with two tablespoons of water, dip the croquettes, roll them in bread crumbs, then again in egg white and again in bread crumbs and fry them in heated sunflower oil until browned.
