Stuffed spleen

Ingredients
1 calf spleen
750 g minced meat (pork and veal 1: 1)
800 g onion
1/2 tsp (3 g) red pepper
mint
parsley
1 spicy pepper
salt
Method
Spleen was washed, and then with a sharp long knife incision is made from the thicker end inwards, taking care not to break. Fill with stuffing, pre-cooked minced meat, finely chopped onion, parsley, mint and spicy pepper, red pepper and salt to taste. Sewn with strong thread from the hole, place in a baking dish greased with oil and bake in a low oven 1 1/2 - 2 hours. In high heat and spleen crack filling expires, so the dish is poor appearance and poor taste.
