Torunska honey pita

Ingredients
2 kg of flour
500 g honey
cinnamon
lemon peel
6 cloves
pinch of cardamom
60 g butter
2 tbsp (20 g) of baking soda
1/4 cup (50 ml) rum
3 eggs
300 g sugar
30 g almonds
Method
Half of the flour is poured on the board in the middle doing "well" and it poured molten honey mixed with cinnamon, grated lemon peel, cloves and cardamom. Knead dough. While still warm, it is added to the butter and knead vigorously. Once cool, add baking soda dissolved in rum. Froth H whole eggs with 300 g of sugar is also added to the dough and finally, carefully pour a little rest and meal. Then knead the dough a little more than an hour. Place in a greased baking dish with butter, its surface is smoothed, capped with a lid and keep a week in dry and ventilated storage. Then the pita is baked in a moderate oven. Now ready to turn in a linen cloth and leave to rest for two weeks. Only then becomes soft and acquire superb taste. Optional, prior to baking, the pita may Sprinkle with finely chopped almonds.
