Turkey Marie-Madeleine

Ingredients
1 young turkey
200 g butter
500 g fresh mushrooms
100 g cheese
1 cup cream
1 tbsp (10 ml) cognac
pepper
salt
Method
The washed and dried turkey rub with salt and pepper, smeared with some of the butter, put it in a deep pan and bake until ready in a moderate oven . Cleaned mushrooms are boiled 10 minutes in salted water. Then rinsed in cold water and cut into pieces. Baked turkey transfer to warmed serving plate, cut into pieces and keep warm. To the rest of the cooking juice add the sliced ​​mushrooms, cognac, cream and grated cheese, and the mixture is placed in a hot oven for 5 minutes. Season with salt and pepper to taste and mix well with the remaining butter. Shredded turkey, pour this sauce and serve immediately.
