Veal brains with eggs
Ingredients
500 g of boiled beef marrow
3 eggs
75 g butter
1/2 tsp (3 g) red pepper
salt

Method
The brain is cut into slices, which are sprinkled with salt and red pepper and place in preheated butter. On fried brain are broken eggs (without stirring) and salting. Frying continues to graying yolk (egg yolk should remain semi-liquid). Serve warm.
