Vegetable sauce for boiled or fried fish
Ingredients
1/2 cup (100 g) leek
1/2 cup (100 g) onion
1 bunch parsley
2 tbsp (20 g) mustard
20 olives pitted
1/2 cup (100 ml) vegetable oil
lemon juice or wine vinegar diluted with
pepper
sugar
Method
Finely chopped onions, parsley and olives mixed with mustard, then a trickle and stirring continuously, add the vegetable oil. Finally, the mixture is seasoned to taste with acid, pepper and sugar (optional).
