Wine Madeira sauce heavy roasted meats and game

Ingredients
2 cups (400 ml), basic sauce of your choice
1 cup (200 ml) strong broth
1 cup (200 ml) strongly aromatic red wine
1/2 tsp (3 g) cinnamon
2 Allspice
5-6 peppercorns
1/2 bay leaf
1 bunch roots soup
1/4 head red beet
1 Apple
1 tbsp (10 g) peas (canned)
1 tbsp (10 g) green beans (canned)
2 tomatoes or 1 tsp tomato paste
salt
sugar
citric acid
30 g butter
Method
Grated root for soup, beet and apple with a pinch of salt sauté in the butter until soft. Add broth gradually, and then the main sauce, chopped tomatoes (or tomato paste) and spices. Everything boils, add the peas and chopped green beans and season to taste with salt, sugar and acid. The wine is added after the sauce withdraw from the fire. This sauce is not pretriva.Softening its taste add 2 tbsp (20 ml) milk or 1 tbsp (10 ml) cream. * The basic sauce is prepared by one of the following recipes: - Основен dark sauce for meat - Основен dark sauce for meat sauces - I type - Основен dark sauce for meat sauces - II type - Основен dark sauce for grilled meats
