Wine sauce stewed game meat

Ingredients
sauce of braised meat
3 cups (600 ml) soup
50 g fat adrenal
2 tbsp (20 g) vegetable oil
2 tbsp (20 g) flour
3/4 cup (150 ml) of wine or 50 ml cognac
1 bunch roots soup
apple 1
1 tbsp (10 g) tomato paste
allspice
pepper
cinnamon
piece of bay leaf
pinch of lemon zest
lemon juice
sugar
salt
Method
Fat underlying melted and it stew chopped roots for soup and apple. Prepare a light roux of butter and flour plant, diluted with sauce of braised meat and add to the vegetable mixture. As a boil, add the tomato paste, spices, salt and lemon juice to taste. The sauce boil on low heat for 10 minutes, triturated through a sieve, add the wine and leave the water bath to serving him.
