Yolk foam

Ingredients
4 yolks
1/2 cup (100 g) sugar
4 tbsp (40 ml) white wine
4 tbsp (40 ml) white table wine
biscotti
Method
Yolks with sugar crash foam, add wine and fight in a water bath until the foam thickens. The foam is poured into glasses and serve with biscotti. In chilled yolk foam can add sweet cream, cake and then again placed in the refrigerator.
