Ingredients
600 ml thick cream
100 g dark chocolate
2 eggs
2 yolks
25 g of powdered sugar
1 tbsp cognac
# To decorate:
50 g dark chocolate
75 g thick cream (whipped )
Method
Preheat the oven to 160 C. Place the chocolate and cream in a saucepan and melt the quiet fire. Remove the pot. Beat egg yolks and sugar in a bowl. Slowly add the warm chocolate mixture, beating constantly. Add the brandy and pour the mixture into a jug. Divide the mixture into 6 glasses or refractory bowls and put them in a small baking tray. Fill it with hot water to reach the middle of the glasses. Bake 40-60 minutes. Remove cups and leave them to cool. For the decoration: Melt the chocolate in a bowl over a pot of boiling water. On parchment paper make shapes using a spoon or syringe. Allow to cool and solidify. Garnish each serving dessert with cream roses and chocolate ornament.
