Croquettes with mushrooms and spinach

Ingredients
500 g spinach
500 g mushrooms
4 potatoes
4 eggs
50 ml sunflower oil
4 tbsp flour
1 tsp salt
1 tsp pepper
5 tbsp breadcrumbs
parsley
Method
Spinach, potatoes and mushrooms are cooked separately in salted water. Vegetables finely and potatoes Strain. Puree mix with vegetables and two eggs (well beaten), flour and a little salt. To this was added finely chopped parsley. Thereof formed small balls which are pressed into a flour. The other two eggs are broken. Croquettes are immersed in them, rolled in breadcrumbs and fry in preheated oil until golden. Once removed from the fat are drained on paper towel. Serve warm with fresh salad or yogurt, seasoned with dill, salt and crushed garlic.
