Croquettes fish, leeks and potatoes

Ingredients
400 g cleaned fish or prepared fish mince
2 leeks
3-4 potatoes
2 eggs
Flour
breadcrumbs
1-2 tbsp grated cheese or feta cheese
pepper
salt
lemon juice
vegetable oil for frying
Method
Fish, cut into very small pieces (or fish mince), sprinkle with lemon juice, salt and pepper and allow to sit for 30 minutes in the refrigerator. Cut the leek into very small pieces, add salt and stew 10 minutes in 2 tbsp vegetable oil. Cooked in a little salted water and drain potatoes while still warm, Strain or smash with a fork. Thus prepared are mixed and add to cheese, 1 egg and pepper. The mixture was kneaded well and it shaped croquettes (as short meatballs) that PANIC consistently in flour, in beaten egg and bread crumbs and fry in very heated vegetable oil (to crust).
