Stuffed quail with lemon and thyme

Ingredients
6 boiled quail
2 tbsp Dijon mustard
3 tbsp olive oil
salt, pepper
# For the filling:
300 g of chopped sausage stuffing
peel of 2 lemons
1 tsp thyme
1 clove garlic, finely chopped
2 tbsp olive oil

Method
Pre-heat the oven to 180 C. In a bowl mix the filling of sausage, grated lemon zest, thyme, garlic and olive oil. Mix well and season to taste with salt and pepper. Already cooked quail filled with the mixture and arrange in the appropriate tray. In a separate bowl mix the mustard and olive oil. Mix very well - until homogeneous. Quail are coated on all sides with her, as with a brush. Bake 25-30 minutes until ready - until golden brown.
