Ingredients
1 1/2 cups (300 g) flour
1/2 cup (100 g) pork lard
2 eggs
250 g pork
250 g veal
1/2 stalk (50 g) leek
2 chili peppers
15 red dried peppers
2 chili peppers
pepper, paprika, cumin , allspice, salt
Method
Pork is cleaned of fat and grind with veal. Add finely chopped leeks, red and spicy peppers and spices. The mixture was kneaded thoroughly and allowed to stand for 2-3 hours. Flour, eggs, salt and lukewarm water knead dough banitsa. Rolled sheet, 2-3 mm thick, which is cut into squares with a side of 6 cm. In the middle of each square put the filling. Adhere to two opposite sides of the square, and then the two short sides of the rectangle formed. Arrange in a greased pan tightly together with the edge up, sprinkle with hot oil, cover with a sheet of dough in the center of which is made hole, and bake in a moderate oven until browned. From time to time during the opening pour a little oil, diluted with water. By OPEC are flooded with oil, diluted with a little salted water and cover with a cloth to stew and tender.
