Artichokes with vinaigrette

Ingredients
small artichokes
lemon juice
salt
Sauce Vinaigrette
Method
Stathe base fresh artichokes break off with scissors cutting off the tips of the leaves are removed and the lower solid sheets. Wash the artichokes well, place in boiling salted and acidified water with lemon juice and cook 20 minutes. Removed, allowed to drain, catch the mean leaf curl and plucked a flower pistils (inside the bottom of the artichokes) are graded with a spoon. Put back in boiling water and boil them until soft. Soft artichokes are removed, allowed to drain and cool. The sauce is served separately.
