Lean turkey with carrots and pine nuts

Ingredients
about 1 kg leg of turkey
750 g carrots
50 g pine nuts
30 g butter
2 tbsp (20 ml) sunflower oil
1 and 1/4 tea cup . (250 ml) vegetable broth
1/2 cup (100 ml) white wine
125 ml white wine vinegar
100 ml cream
1 tbsp mustard
1/2 tsp dried thyme
1 tsp starch or flour
1 tbsp sugar

Method
Wash the turkey and dries. Skin gently lifted and bottom distributed thyme. Leg rub with salt and pepper, fry are everywhere in the vegetable oil, transfer to a baking dish and bake 75 minutes in a preheated oven at 190 C, occasionally dilute broth and wine. Pine nuts are roasted without fat. Carrots and fry in the butter. Add sugar, vinegar, salt and pepper to taste, and the mixture stew for 10 minutes, covered with a lid. Finally stir in pine nuts. The meat is removed from the oven and keep warm. Sauce from baking transferred into a small saucepan and stir in the mustard and cream. Add starch mixed into a little water, and the mixture boil for about 3 minutes, until it begins to thicken. Seasoned with pepper and salt, if necessary. Cut the meat into slices and served with carrots and gravy.
