Ingredients
1 kg veal
500 g couscous
200 g chickpeas, soaked stale 12:00
1 onion
1 eggplant
4 carrots
4 large tomatoes
100 g pumpkin
3 small zucchini
2 cloves garlic
1 bunch coriander, parsley
1/2 tbsp paprika 1 tbsp ginger, a pinch of saffron, a pinch of cinnamon, salt

Method
Stew onion and garlic in olive oil and add the saffron, cinnamon, ginger, red pepper, coriander, parsley, minced meat everything in small pieces. Stew for 5 minutes.
