Apple sponge cakecheta (muffins)

Ingredients
# 8 For cakes with a diameter of 8 cm tray:
2 eggs
4 tbsp + 8 tsp sugar
4 tbsp flour
1 tbsp butter
1 large apple
1 vanilla
4 -5 tbsp cold water

Method
Apples are washed, peeled and cleaned of seeds, cut thicker, irregular pieces. Each cutter is placed in 1 level tsp sugar. Top distributed apples to 1/3 of the capacity of the tray. Each cutter is added piece of butter the size of a peanut and 1 tsp water. Trays are arranged in a baking dish and baked for a few minutes until soft apples. During this time the dough is cooked. Whites of the eggs were carefully removed and 1 tbsp sugar is broken down into hard snow. Yolks, remaining sugar and 1-2 tablespoons cold water is broken down into a thick cream. Stirring gently (but not with a mixer), gradually add flour spoon, then part of the egg white and snow so until exhausted. Finally puts and vanilla. Trays with apples are removed from the oven and quickly distributed the dough on top, each cutter should be filled no more than 2/3. Bake at 180 C about 13-15 minutes in preheated oven. Two or three minutes after removing from the oven, are removed from trays. Decorate be optional - ground walnuts, caramel glaze of chocolate spread or otherwise.

I do not have specific shapes. Can I use the forms custard? Will it work?
