Breaded cutlet of mutton ham

Ingredients
Approximately 2 kg of meat from the leg of mutton
2 links roots soup
1 onion
4 eggs
1 cup milk
flour
breadcrumbs
8 cups ivory potion
1 bay leaf
4 cloves
few peppercorns
frying fat
30 g butter
salt
parsley
Method
The meat is cut by the femur and its place put half root soup, chopped and mixed with parsley and salt. Then the meat is tied with twine clean and leave to rest in a cool place for at least one hour. The bone decoction boil together with other roots for soup, also chopped, bay leaf, pepper and onion with the inserted therein cloves. Add the meat and boil for about an hour, then removed, allowed to cool, and is released from the string. Cut to the patty 10, transversely of the muscle. Eggs, milk, flour and a pinch of salt is made thick pancake dough, wherein PANIC cutlets, and then rolled in bread crumbs. Fry in very hot oil until golden color removed in a heated plate and on each put a piece of butter.
