Chicken ragout, baked in cheese sauce

Ingredients
350 g roasted or boiled meat chicken
50 g butter
2 tbsp (20 g) flour
1 and 1/2 cup (300 ml) milk
4 tbsp cream
4 tbsp (20 ml) broth from giblets
50 g feta cheese
1 tbsp (10 g) breadcrumbs
nutmeg
pepper
salt
Method
Make a light roux from the butter and flour, diluted with milk and boiled. Add cream, broth, salt and spices and boil 20 minutes in a water bath. Add most of the grated feta cheese and allowed to melt in the sauce. Part of the sauce is placed in baking pan, add the meat, cut into thin strips, pour the rest of the sauce and sprinkle the remaining feta cheese and breadcrumbs. Bake in a low oven for 15 minutes and then for 2 minutes under the grill.
