Coconut-banana muffins

Ingredients
1 and 1/4 cup flour
1 tsp baking powder
1/4 tsp salt
2 ripe bananas, mashed (3/4 cup)
1/2 cup melted butter
2/3 cup sugar
2 eggs
vanilla 1
3/4 cup coconut (lightly browned)
optional: 3/4 cup almonds (lightly browned)
Method
Flour, baking powder and salt are sifted and mixed in a separate bowl. Bananas, the butter, sugar, egg, vanilla and half coconut (and almonds if put) mix with hand mixer in a large pot. The flour mixture was poured into a liquid mixture and stirred slightly, leaving clumps. Pour into pre-oiled (or covered with paper cups) form for muffins and dusted with the rest of the coconut. Bake in preheated oven at 200 C for about 25-30 minutes or until ready and getting the desired tan to suit your taste.
