Festive turkey American

Ingredients
1 small turkey (about 3 kg)
100-200 g salo
pepper
salt
# For the filling:
100 g breadcrumbs
1 tbsp flour
10 g fresh yeast
1 / 2 cups (100 ml) milk
2 eggs
1 onion
entrails of turkey
1 small bunch of parsley
1 tsp dried marjoram
2-3 tbsp cream
grated lemon peel
pepper
salt
Method
Yeast dissolved in warm milk with flour and allowed to stand for several minutes. Then add the beaten eggs, pre-fried breadcrumbs and chopped onion. The mixture is seasoned with marjoram, parsley, a pinch of grated lemon peel, salt and pepper to taste. Finally add the chopped pre-boiled or fried offal of turkey and cream. Washed and dried turkey rub inside and out with salt and fill with the mixture. Sutured and placed in a suitable tray with chest up. Salo is cut into thin slices, which rank on turkey (it is better to be stuck with toothpicks). The bird is covered with aluminum foil and bake in a moderate oven until ready (2-3 hours). During the baking occasionally watered with sauce in a separate pan, fthe oil and salo removed 10-20 minutes before baking, so the turkey to red. When serving meat partitioned and garnish with stuffing and steamed vegetables separately.
