Herrings with cream

Ingredients
4 fresh herring
3/4 cup (150 ml) milk
1 cup (200 ml) white wine
2 tbsp (20 ml) vinegar
1 onion
1 clove garlic
1 tsp (5 g) mustard
2 yolks
2 tbsp (20 g) sour cream
1 tsp (5 g ) paprika
6 peppercorns
Method
The clean, separated herring fillets are soaked for 1-2 hours in milk and drain well. Wine vinegar and cook with sliced ​​onion, garlic cloves, peppercorns and salt. Be placed herring, make some hot water so as to cover them, and cook 7 minutes. Broth strain, allow to cool and mix with beaten egg yolks, sour cream, paprika and mustard. The sauce is poured on herring. Serve cold.
