Mutton ragout (Ragout di Montoya)

Ingredients
500 g of meat ovneshko
1 tbsp (10 g) flour
1 and 1/4 cup (250 ml) red wine
1 tsp (5 g) tomato paste
1 tbsp (10 ml) vegetable oil
1 mopkov
1 slice celery
1 clove garlic
1/2 bay leaf
leaves rosemary
salt
pepper
Method
The meat is cut into large chunks, add salt and sprinkle with pepper. Fry with vegetables, bay leaf and a few rosemary leaves. Dusted with flour and add the tomato sauce. After repeated kpatko frying up 1 and 1/4 cup (250 ml) of water and red wine. Meat stew until soft.
