Peking Duck

Ingredients
1 duck (1.75 kg)
1 tbsp honey
3 tbsp soy sauce
1 tsp sesame butter (cow butter)
1 tsp paprika
3-4 tbsp water
# For pitas:
500 g flour

Method
Duck, if frozen, thaw completely. Flushed several times with boiling water (with a colander in the sink). Near the door is placed hook and hang in a cool, well-ventilated place for the night (for convenience can be used fan). The next morning, in a small bowl, stir the honey, soy sauce, sesame butter and paprika (without water). The duck is placed in the tray. Spread with a brush on top and inside (even) with honey mixture, keeping 1 tbsp of it, and let stand at least 1 hour. The oven is heated to 200 C. Add 3-4 tbsp water to the remaining 1 tbsp honey mixture and pour in the cavity of the duck. With meat skewers or wooden sticks fastened. Duck baked hour and a half (dripping clear liquid). Once removed from the oven, leave in a warm place for 10 minutes before being removed skewers. pitas: Sift the flour into a bowl, slowly add 250 ml boiling water and stir well. Add 90 ml cold water and knead (with hands) to obtain an elastic dough. Cover with a damp cloth and leave for 15 minutes. Then form small balls are rolled into thin buns (pancakes), smeared with butter and bake in a dry pan (medium heat for 20-30 seconds blisters and another 10-15 seconds, until lightly constipation) both countries. The duck is served in the traditional way with sauce Hoisin, leeks (fresh), onion and cucumber strips.

Challenge is this recipe. I wonder if I should risk it and try. Whether you become a chicken?

What exactly bothers you the recipe?

It bothers me just *hanging* of the duck. Shall provide adequate time - not too hot, as to vmirishe overnight and place - not to be seen, who knows what will the neighbors think: -))) (this last is a joke, it is not me bother). All in preparation time before baking is the secret and it just bothers me. I have read that and then plastered with honey mixture is nice to stand again hung in a ventilated area.
