Pork roll with green olives

Ingredients
1 kg pork loin (piece)
200 g chicken mince
1 bunch parsley
100 g pitted green olives
4 tbsp mayonnaise
pepper
salt

Method
The meat is washed , dry and with a long sharp knife, cut a thin sheet that further thins with wooden mallet. Rub with salt and pepper, spread is smeared with 3 tbsp mayonnaise and sprinkle with chopped parsley. Top distributed chicken minced meat, seasoned with pepper and remaining mayonnaise. On mince rank olives, cut into halves. Meat turns carefully roll and tied with thread. Wind up the sides with aluminum foil, put it in a baking dish and bake about 1 hour in the preheated oven at 220-230 C. The finished roll is allowed to stand for 15 minutes, then released from fthe oil and strings and cut into slices.
